Lasagne Pie

  • 15 ounces ricotta cheese, part skim milk
  • 1 package spinach -- thawed
  • 8 ounces spaghetti -- uncooked
  • 2 cups tomato sauce -- cooled
  • 1/4 cup parmesan cheese -- grated
  • 3 large egg -- separated
  • 1/2 cup mozzarella cheese, part skim milk -- shredded
  • 1 tablespoon olive oil

Pre-heat oven to 350*F. Cook spaghetti al dente and drain, Mix with white of 1of the eggs and the parmesan cheese. Grease a 10 inch springform pan with the olive oil and add spaghetti mixture pressing to form crust. Next mix the ricotta and 3 egg yolks very well and form next layer. Then add the spinach as evenly as possible. Now beat the remaining egg whites until semi stiff peaks form and fold into tomato sauce, and add on top for a layer. Lastly is the mozzarella for the top crust. Cover and bake at 350*F for 30 mins, then remove cover and bake 15 minutes more or until cheese is nicely browned. Let stand about 10 mins to set, then remove springform side and cut and serve.

NOTES : I originally found this recipe in some name brand type cookbook but over the years it has changed so much that only the idea is theirs. I hope you enjoy!!!
