Easy glazed pork roast

Ingredient -
  • 1 (3-1/2 to 4 pound) boneless pork loin roast
  • 1 (16 oz.) can whole berry cranberry sauce
  • 1/4 cup lemon juice
  • 3 Tbls. brown sugar
  • 1 tsp. cornstarch

Preparation Method
  1. salt and pepper to taste
  2. Preheat oven to 450 degrees.
  3. Place meat in shallow baking dish; season with salt and pepper. Roast 20 minutes. Reduce oven temperature to 325 degrees; continue roasting.
  4. Meanwhile, in a small saucepan, combine remaining ingredients. Over medium heat, cook and stir until slightly thickened, about 5 minutes. After meat has cooked 1 hour, drain off fat; spoon half of the sauce over meat. Continue roasting 1 to 1-1/2 hours or until meat thermometer reaches 170 degrees, basting occasionally. Spoon remaining sauce over meat; return to oven 10 to 15 minutes. Let stand 10 minutes before slicing.
